In 2022, Katrina Hagan transformed her personal journey with lupus and food sensitivities into a mission to bring joy back to the table for those with dietary restrictions. What began as home-baked treats evolved into Sensitively Sweet, a Nixa, Missouri bakery dedicated to creating delicious, allergen-free delights. In this interview, Katrina shares the story behind the bakery's name, her commitment to ingredient transparency, and how community support has been integral to her success .
Tell us your story of how Sensitively Sweet was born. Who created the name?
Sensitively Sweet was born out of necessity-and love. When I was diagnosed with lupus and developed severe food sensitivities, and my husband was diagnosed with Alpha-gal Syndrome, finding safe treats became almost impossible. We missed the joy of sharing delicious desserts with others, and I knew we weren't alone. So I started baking allergen-free sweets in my kitchen, carefully crafting recipes that were free of the top allergens and Alpha-gal safe. The name "Sensitively Sweet" came from a friend who suggested it after hearing how many different food sensitivities I was baking for it just fit perfectly.
Can you share a bit about what you do and your personal stories with Alpha-gal and other allergies?
Living with a spouse who has Alpha-gal Syndrome and dealing with my own autoimmune and allergy issues has completely changed how I approach food and life. I know what it's like to feel anxious every time you eat something new, or to grieve the loss of your "old" diet. That experience pushed me to learn everything I could about hidden allergens, cross-contamination, and ingredient transparency. Sensitively Sweet isn't just a bakery-it's my way of turning a difficult diagnosis into something beautiful and helpful for others who are struggling.
How do you ensure your products are safe for people with Alpha-gal Syndrome and other allergies?
At Sensitively Sweet, we take allergen safety extremely seriously. All our ingredients are carefully vetted—not just for the absence of allergens, but also for their sourcing and processing. We use brand-new equipment that has never been exposed to allergens, and we work in a dedicated facility that's 100% free from gluten, dairy, eggs, nuts, soy, and mammal byproducts. I read every label, contact manufacturers directly, and only work with trusted suppliers. I also stay up-to-date with ingredient changes and food safety regulations. For Alpha-gal specifically, I ensure every item is completely free of mammalian ingredients, including hidden animal-based additives like natural flavors.
What would you say is the most challenging part about navigating Alpha-gal Syndrome and other food allergies?
The hardest part is the uncertainty. Ingredients change, labels aren't always clear, and eating out can feel risky. There's also a lot of misinformation out there, especially about Alpha-gal. It's emotionally exhausting to be on high alert all the time-but it's also empowering to take control and rediscover safe, joyful ways to eat.
Can you share any advice for someone newly diagnosed with Alpha-gal Syndrome or another food allergy?
First: take a deep breath. It's overwhelming at first, but it does get easier. Start with what you know-whole foods—and build from there. Add in the "fun" stuff gradually. Learn to read labels carefully, find your safe staples, and don't be afraid to ask questions. Connect with others in the allergy community-you are not alone. And most importantly, give yourself grace. It's okay to feel frustrated, but don't lose sight of the fact that you can still live a full and joyful life.

Helping people celebrate birthdays, holidays, or just a regular Tuesday with something delicious and safe makes all the hard work worth it.
What is your best-selling item? What is your favorite item?
Our best-selling items are our brownies, cinnamon rolls, and our take-n-bake chicken pot pie. People love that they're indulgent, comforting, and completely allergen-safe.
My personal favorite is our sourdough. It's the closest thing I've had to "regular” bread—l honestly can't taste a difference. It feels like getting a little piece of normal back.
Any exciting events or anything else you would like to share with us?
Yes! We're getting ready to launch our e-commerce site with online ordering for our baking mixes. This has been a long time coming, and I can't wait to make our products more accessible to people across the country.
